2Tbs Garlic - finely chopped
3Tbs Chili Powder
2tsp Cumin
2 Tbs Olive Oil

METHOD
Add 1Tbs olive oil to a large pot over medium high heat. When hot, add turkey and brown the meat while breaking up any clumps, 5 -8 minutes, you may need to turn the heat down to medium. Remove the meat and juice, set aside.
Add 2Tbs olive oil to the same pot over medium high heat. Add onions, celery, bell pepper, bay leaf, oregano & jalapeño. Stir and saute for 5 -8 minutes. Add garlic, stir for 1 minute. Add cumin & chili powder, stir for 2 minutes over low heat. Add chicken stock, turn heat up to medium, and scrape the sides and bottom of you pot, then add the tomatoes, turkey & juices. Stir well and bring to a simmer for 15 minutes, stirring occasionally.
Add 0.4oz/9g of dark chocolate and stir. Add kidney beans and bring to a simmer for 10 minutes. Remove the bay leaves and taste the chili for seasoning, adjust as needed.
Serve in a bowl topped with sour cream and grated sharp cheddar cheese, and maybe a dash of hot sauce.
I hope you enjoy this chili as much as I do. It is so good, even cold! I have made lettuce wraps with this and a little dab of sour cream and splash of hot sauce, it's absolutely wonderful. Enjoy!
