Quick White Bean Chicken Chili | Perfect for Leftover Chicken or Turkey

Tonight we’re making White Bean Chicken Chili, a cozy one-pot meal that’s ready in under an hour and absolutely perfect for using up leftover roast chicken or turkey. It’s brothy, creamy (thanks to mashed white beans), gently spicy, and loaded with comfort.

Ingredients
30 ml olive oil (2 tbsp)
1 large yellow onion, chopped
1 large jalapeño, seeded and finely chopped
5 cloves garlic, minced (about 2 tbsp)
1 tsp dried oregano
1 tsp ground cumin
½ tsp sweet paprika or chili powder
Cayenne, a pinch (or more if you’re feeling brave)
1 tsp kosher salt, plus more to taste
Freshly cracked black pepper
960 ml low-sodium chicken broth (4 cups)
2 cans cannellini beans, 425 g/15 oz each, rinsed + drained
2 cans diced green chiles, 113 g/4 oz each (use the liquid too)
300 to 360 g cooked shredded chicken (2½ to 3 cups)
150 g corn kernels (1 cup), fresh or frozen
½ lime, juiced (plus wedges to serve)

Method
1) Get the base going
Warm the olive oil in a large pot or Dutch oven over medium heat. Add the onion and jalapeño and cook, stirring often, until softened and glossy, about 6 minutes.
Add the garlic, oregano, cumin, paprika (or chili powder), cayenne, salt, and a few cracks of black pepper. Stir for 1 minute, just until it smells like you’re making excellent decisions.
2) Simmer and thicken
Pour in the broth, then add the cannellini beans and the diced green chiles with their liquid. Bring to a boil, then lower to a simmer and cook 18 to 20 minutes, stirring now and then, until the liquid reduces by about half.
Turn off the heat and mash some of the beans against the side of the pot with a wooden spoon. Keep going until the broth looks noticeably thicker and creamier.
3) Add the good stuff
Return the pot to medium heat. Stir in the shredded chicken and corn and cook about 3 minutes, just until heated through.
Squeeze in the lime juice, taste, and adjust with more salt, pepper, and cayenne if needed.
4) Serve it your way
Ladle into bowls and top as you please. Lime wedge on the side is non-negotiable. 😌🍋
