2 Lbs Polenta, cut into 1/2 inch slices

  1. Heat 3 Tbs olive oil in a medium saucepan over medium heat. Once hot, add tomatoes & oregano, and simmer for 15 minutes - uncovered.

  2. In a large skillet over medium high heat, add 1 Tbs of oil, once hot add onion, bell pepper, garlic & and seasonings. Stir to combine, cover and saute for 5 minutes until vegetables are softened. Add the sausage stirring and breaking up the sausage as you do so - about 5 minutes. Cover and simmer until the vegetables are tender and the sausage is cooked, about 5 -8 minutes. Add the tomatoes and simmer, uncovered for 10 minutes.

  3. Heat your broiler. In a casserole dish [~9 x 13 inch] add 1 Tbs oil and coat the dish. Place sliced polenta, slightly overlapping in three columns into the dish. Brush with remaining oil and broil for 10 -15 minutes until slight brown and crispy.

An easy, quick, aromatic and tasty dish you can throw together in no time. Enjoy!
