Italian Sausage & Polenta Broil

A comforting dish featuring sweet & spicy Italian sausage nestled on a bed of polenta, all topped with a rich tomato sauce. Crowned with fresh mozzarella and broiled to perfection, it’s a hearty meal that brings the flavors of Italy to your table. Easy to make, under 30-minutes, and very easy to assemble. Give it a go, I hope you'll love it.
1 Can(28oz) Crushed Tomatoes
1 Tbs Fresh Oregano
1 Med Onion, halved, cut into wedges
1 Med Bell Pepper, any color, cut lengthwise and thinly sliced
2 Cloves Garlic - minced ASXl-
1/2 Tsp Pepper
1/2 Tsp Salt
1/4-1/2 Tsp Red chili flakes
1 Lb Italian sausage, spice or sweet, or combination - remove from casing
2 Lbs Polenta, cut into 1/2 inch slices
1/2 Lb Fresh Mozzarellas - cut into 1/4 inch slices
5 TBS Olive oil
Heat 3 Tbs olive oil in a medium saucepan over medium heat. Once hot, add tomatoes & oregano, and simmer for 15 minutes - uncovered.
In a large skillet over medium high heat, add 1 Tbs of oil, once hot add onion, bell pepper, garlic & and seasonings. Stir to combine, cover and saute for 5 minutes until vegetables are softened. Add the sausage stirring and breaking up the sausage as you do so - about 5 minutes. Cover and simmer until the vegetables are tender and the sausage is cooked, about 5 -8 minutes. Add the tomatoes and simmer, uncovered for 10 minutes.
Heat your broiler. In a casserole dish [~9 x 13 inch] add 1 Tbs oil and coat the dish. Place sliced polenta, slightly overlapping in three columns into the dish. Brush with remaining oil and broil for 10 -15 minutes until slight brown and crispy.
Remove from broiler and cover with sauce. Add sliced mozzarella on top and place under broiler for 2-4 minutes until cheese is slightly brown and melted.
