Easy One Pot Pasta with Spinach, Cherry Tomatoes

Need dinner in 30 minutes? This lemony one-pot pasta brings big flavour with almost no effort. Just spaghetti, cherry tomatoes, fresh spinach, a hit of citrus, and olive oil magic — all cooked together in one pan.

It’s zesty, silky, satisfying… and perfect for lazy nights or late summer cravings. Top it off with a handful of freshly grated Parmesan and you’re good to glow.🫶 Vegetarian | No mess | 100% cozy - Simple, satisfying, and packed with sunshine!



Ingredients

  • 450 g spaghetti

  • 450 g cherry tomatoes, halved (about a1lb)

  • Zest of 2 lemons

  • 105 ml olive oil (that’s ¼ cup + 3 tablespoons)(that’s ¼ cup plus 3 tbsp)

  • 2 tsp kosher salt, plus more to taste (Diamond kosher salt, if using Morton's use only 1 tsp as it's very salty)

  • 1 large bunch spinach (or kale, stems removed) chopped 5-6 oz 140 -170g

  • Freshly ground black pepper

  • Parmesan, to serve

  • Optional but delightful: red pepper flakes, fresh basil, or whatever your heart fancies

Method

Fill your kettle and bring just over 1 litre of water to a boil. (34 fl oz ) Meanwhile, in a wide, shallow pan (big enough for the spaghetti to lie flat), add your spaghetti, halved cherry tomatoes, lemon zest, olive oil, and salt.


Carefully pour that boiling water into the pan. Cover with a lid and bring it all up to a boil.Then uncover and let it bubble gently for about 6 minutes. Use tongs to give the pasta a wiggle now and then so it doesn’t clump.


Toss in your chopped kale or spinach. Keep simmering until the pasta is tender and that lovely liquid has turned into a silky sauce.


Taste, season with more salt and a crack of pepper. Serve with Parmesan, and sprinkle on those extra touches if you like a bit of heat or herby flair.
