Chicken Florentine

Golden, crispy chicken nestled in a velvety, garlicky Parmesan cream sauce — and just when you think it can't get better… in comes the spinach like a little green goddess. This one-pan Chicken Florentine is elegant, cozy, and ready in about 30 minutes. No flourishes, no fuss — just a creamy Italian-style hug on a plate.

Perfect for weeknights or when you need to impress. And yes, it reheats like a dream. Let’s get in that kitchen.

Ingredients


  • 30 g all-purpose flour (¼ cup)

  • 25 g grated Parmesan (¼ cup), plus more for serving

  • Salt & freshly ground black pepper

  • 4 thin-cut boneless, skinless chicken breasts (approx. 450 g)

  • 15 ml olive oil (1 tbsp)

  • 60 g butter (4 tbsp), divided

  • 1 medium shallot, finely minced

  • 2 garlic cloves, minced

  • 120 ml dry white wine (½ cup)

  • 120 ml chicken broth (½ cup)

  • 1 tsp dried basil (or 1 tbsp fresh)

  • 1 tsp dried oregano (or 1 tsp fresh)

  • 120 ml heavy cream (½ cup)

  • 60 g cream cheese, room temp (2 oz)

  • 60 g baby spinach (about 2 packed cups)

Method


Coat that chicken like a champ:

On a plate, mix the flour, Parmesan, salt, and pepper. Dredge each chicken breast until gloriously coated.

Get it golden:

In a large pan over medium heat, melt olive oil and half the butter (2 tbsp). Add the chicken and sizzle until golden — about 4 minutes per side. Don’t cook through yet. Remove and set aside.

Build the base:

Melt the remaining butter. Toss in the minced shallot, garlic, and a pinch of salt. Stir until soft and fragrant (about 2 minutes).

Pour in the flavor:

Deglaze the pan with wine and broth. Add basil and oregano. Stir and scrape up the yummy bits, letting the liquid reduce by half — 3 to 4 minutes.

Make it creamy-dreamy:

Add heavy cream and cream cheese. Stir until melted and thickened into a glorious sauce (about 6 minutes). Fold in spinach until wilted and luscious.

Bring back the bird:

Return the chicken to the pan and let everything simmer together for 4 to 5 minutes until the chicken is cooked through.

Serve it up:

Top with extra Parmesan and serve immediately, preferably with something that soaks up sauce (hello, crusty bread or buttered pasta).
