Tortellini with Peas & Crispy Prosciutto

Imagine a plate of tender cheese tortellini, each bite bursting with rich, cheesy goodness. The tortellini are nestled in a velvety, creamy sauce that perfectly coats each piece. Ingredients
18oz/300g Cheese Tortellini - from refrigerator section of store
285g/10oz Frozen Peas
237ml/1C Heavy Cream
237ml/1C Chicken Stock
4 Slices/2oz Prosciutto
1 Shallot, finely chopped
1 & 1/ Tbs Unsalted Butter - more if needed
1/4 Tsp Nutmeg
1&1/2 Tsp Lemon juice
1&1/2 TBS Lemon zest
Method
Add 1 Tbs of butter to large skillet to melt, once hot saute the prosciutto for about 2 minutes on each side to get crispy. Remove from pan and set aside. In the same pan add the shallots and saute for a few minutes until tender. If dry, add the extra 1/2 Tbs of butter.
Add the peas, tortellini, cream, chicken stock, ~1/4 tsp pepper & nutmeg. Stir well. Over medium heat, bring to a simmer for 5 minutes until pasta is cooked. Stir in lemon zest and lemon juice. Taste for seasoning, add salt as desired.
To serve, chop the prosciutto and sprinkle over the pasta.
