Pumpkin Spiced Banana Bread with Maple Glaze combines the familiar comfort of banana bread with autumn's pumpkin spice. Ingredients
2 cups all-purpose flour 240g
2 teaspoons pumpkin pie spice
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegetable oil 118 ML
1/2 cup sugar 100g
1/2 cup lightly packed brown sugar 90g
2 large eggs
2 teaspoons vanilla extract
2 medium bananas mashed 1 cup
1 cup canned pumpkin puree 212g (not pumpkin pie filling)
1/2 cup chopped walnuts optional 75g
Preheat the oven to 350°F/ 176C Grease and flour a 9×5 inch loaf pan.
Method
In a medium bowl whisk together the flour, pumpkin pie spice, cinnamon, baking soda , baking powder & salt.
In a large bowl whisk together the oil, sugars, eggs & vanilla extract until no lumps remain. Stir in the mashed bananas & pumpkin puree.
Carefully stir the flour mixture into the wet ingredients using a rubber spatula or wooden spoon. Then stir in the chopped nuts.
Pour the batter into the prepared pan and bake for 50-60 minutes or until an inserted toothpick comes out clean and the top feels firm to the touch. The loaf shouldn't wobble if you nudge the pan. Allow to cool before glazing.
Maple Glaze/Icing (optional)
4 tbsp. salted butter 56g
1/3 cup pure maple syrup 78ml
1 1/2 cups powdered sugar, sifted 180g
1 tsp. vanilla extractpinch of salt
Melt the butter and maple syrup in the microwave in 30 second intervals until melted.
Then add the powdered sugar, vanilla and salt to the butter mixture. Whisk until smooth and lump free.
Add more powdered sugar to make a thicker glaze. Pour glaze all over the cooled banana bread.
