Makes 12 doughnuts (or 12 muffins)

Ingredients


  • Non-stick spray, for the pan

  • 225 g (1 ¾ cups) all-purpose flour

  • 1 ¼ tsp baking powder

  • ¾ tsp fine sea salt

  • 2 tsp ground cinnamon, divided

  • ½ tsp freshly grated nutmeg

  • 225 g (1 cup / 2 sticks) unsalted butter, room temp, divided

  • 165 g (¾ cup) light brown sugar

  • 150 g (¾ cup) granulated sugar, divided

  • 2 large eggs, room temp

  • 1 tsp vanilla extract

  • 120 ml (½ cup) apple cider

 Method


Heat & prep

Pre-heat oven to 175 °C (350 °F). Lightly grease two 6-cavity doughnut pans or a 12-cup muffin tin. In a bowl, whisk together flour, baking powder, salt, 1 tsp cinnamon, and nutmeg. Set aside.


Cream the base

In a stand mixer with the paddle attachment, beat 140 g (10 tbsp) of the butter with the brown sugar and 50 g (¼ cup) of the granulated sugar until pale and fluffy (3–4 min). Add eggs one at a time, then vanilla.


Fold & pour

With the mixer on low, add the dry ingredients. Slowly pour in the apple cider until the batter is smooth and glossy.


Bake to golden

Fill each mould about ⅔ full (you can pipe or spoon it in). Bake 12–15 min for doughnuts or 15–20 min for muffins, rotating halfway, until golden and a skewer comes out clean.


Finish with sparkle

While they bake, whisk remaining 100 g (½ cup) sugar with 1 tsp cinnamon. Melt the remaining 85 g (6 tbsp) butter. Cool doughnuts 5 min, then brush with butter and toss in cinnamon-sugar. Serve warm or at room temp — preferably with a mug of something cozy.
