Millionaires Shortbread

Ingredients


Shortbread Base


180 butter

80g granulated sugar

190g Allpurpose flour

1/2 teaspoon salt


Line a 8X8 [or 9X9] inch baking tin with parchment paper, leave a few inches overhang to allow easy removal from pan.


Preheat oven to 250F/180C


  1. In a bowl, mix dry ingredients by hand. Then work the butter into the dry ingredients by hand until it resembles fine breadcrumbs.

  2. Toss into prepared pan and press down to even it out.


Pop in oven for 20 - 25 minutes, just until the edges begin to brown lightly. Set on rack to cool.


Caramel Layer


100g butter

100g LB sugar

2TBS Golden

1 can 396g

1/4 tsp salt


  1. In a medium saucepan, melt the butter, light brown sugar, and golden syrup over low heat, stirring continuously until the sugar has dissolved.

  2. Add the condensed milk and bring to a gentle boil. Reduce the heat and simmer, stirring constantly, for about 10 minutes, or until the mixture has thickened and turned a golden caramel color. If using a thermometer 236 -239F | 113 -115C is a perfect temp.

  3. Pour over cooled, shortbread, level out with a spatula. Allowed to cool completely at room temperature.


Chocolate Topping


300 g of bittersweet chocolate.

You can mix your chocolates as you like, i.e. dark/bittersweet/milk chocolate


Chop your chocolate into chunks and melt in the microwave at half power for about one minute. Check it every 15 seconds and stir. You can also melt the chocolate over a double boiler if you prefer.

Once melted, pour over cooled caramel and spread out evenly. Optional: sprinkle the top with a little flake salt if desired.


Allowed to cool at room temperature before slicing into squares or fingers. I hope you thoroughly enjoy this delicious and decadent cookie.
