Give yourself a treat with this classic Creamy Parmesan Polenta. Made from coarse cornmeal, this dish is cooked to perfection with just the right amount of salt and water to achieve a smooth, creamy consistency. Enhanced with freshly grated Parmesan cheese, unsalted butter, and a touch of freshly ground black pepper, this polenta offers a rich, savory flavor that will delight your taste buds. Perfect as a side dish or a base for your favorite toppings, it's a versatile and delicious addition to any meal.

Ingredients

1 cup medium-to-coarse cornmeal

Salt

1 - 4 cups of water

½ to 1 cup freshly grated Parmesan cheese, depending on your taste

2 tablespoons unsalted butter

Freshly ground black pepper

Method

Grab a medium saucepan and mix the cornmeal with 1 cup of water. Whisk it well to make sure there are no lumps. Put the pan on medium-high heat, sprinkle in some salt (1/4tsp), and bring it to a boil. Turn the heat down to medium and keep cooking, whisking often and adding water as needed to keep it smooth and lump-free, using about 3 to 4 more cups. If it gets too thick, just add a little more water; it should be about the consistency of sour cream.

The polenta will take up to 15 to 30 minutes to cook, depending on the grind. Stir in the cheese and butter. Taste it, and add more salt if needed, and plenty of pepper. Serve.
