Indulge in a layer of velvety chocolate nestled atop a buttery, crumbly crust. This simple to make chocolate dessert is a symphony of rich cocoa flavors, balanced with a delicate sweetness and a hint of liqueur. Each forkful glides smoothly, leaving you craving more. Filling
90g/3oz Dark or Bittersweet Chocolate - melted and cooled to room temperature
170g/6oz Butter - softened
170g/6oz Sugar
3 Eggs
2 Tbs of Water or chocolate/coffee liqueur
Graham Cracker pie shell
6oz Digestive biscuits /or Graham crackers
3oz Butter – melted
Crush the biscuits and add melted butter. Press into a 9 inch removable bottom tin, place in fridge to set.
Method
With a hand-held or stand mixer, beat the sugar and the butter until light and fluffy, about three minutes. Add the melted chocolate and liqueur and mix well. Clean sides of bowl often. add eggs one at the time beating well after each addition.
Gently pour onto crust and spread evenly around pan. Place in refrigerator for three hours to chill and set. Serve with cream and shaved chocolate, or just on its own. It is delicious!
Optionally, serve with a little whipped cream and grated chocolate.
