330g (1½ cups) light brown sugar
240ml (1 cup) vegetable oil
4 whole eggs
250g (2 cups) all-purpose flour, plus extra for dusting
8g (2 tsp) baking powder
2g (½ tsp) baking soda
4g (2 tsp) ground cinnamon
3g (1½ tsp) ground ginger
0.5g (¼ tsp) ground cloves
1g (½ tsp) ground nutmeg
3g (½ tsp) salt
200g (2 cups) grated carrots
Butter, for greasing
Cream Cheese Glaze:
240g (2 cups) powdered sugar (icing/confectioners' sugar)
10g (2 tsp) unsalted butter, melted
2.5g (½ tsp) vanilla extract
170g (¾ cup) cream cheese, at room temperature
Method
