Banana Cream Pie

Summer time treats! This dessert is a flavorful treat that can enhance any meal, practically qualifying as a health food with its fruit content :)

Ingredients
2 Eggs
2 Egg yolks
2g/1/4tsp Salt
40g/1/4c Corn starch
250g/1&1/4c Sugar, granulated
720ml/3c Milk
15ml/1tbs Vanilla extract
57g/4tbs Butter, unsalted
4 Bananas
1 Prepared Pie Crust
Whipped Topping
480ml/2c Whipping cream
50g/1/4c Powdered/Icing sugar
10ml/2tsp Vanilla Extract
Method
Whisk eggs & yolks in a medium bowl and set aside.
Off the heat. In a medium saucepan, add sugar, salt & cornstarch. Whisk to combine. Add the milk and continue to whisk until the mixture is combined and lump free.
Place pan over medium high heat and continuously whisk until it thickens, about 5 minutes. Once thickened, reduce the heat to medium and continue stirring for another 5 -6 minutes. Turn off heat.
Temper the eggs. Take about 1 cup of the mixture and drizzle it into the egg mixture VERY slowly and whisk the eggs vigorously. Once combined, the egg mixture will be warm. Over medium hight heat, return the egg mixture to the pan slowly while stirring all the time, for 2 minutes.
Transfer to a medium bowl, cover with plastic wrap right on the surface of the custard. Allow to come to room temp, you can chill it in the fridge for 30-minutes.
Assemble your pie
Slice 2 of the bananas [toss sliced bananas in a little lemon juice to help prevent browning]
Spread a thin layer of the custard on the bottom of the pie and arrange the bananas on top of that.
Gently pour/spread your custard on top of the bananas. Place plastic wrap directly on the custard to cover. Refrigerate for at least 6 hours or overnight.
When ready to serve, whip the cream/sugar/vanilla to soft peaks. Spread cream on chilled custard and arrange the banana slices on top of the cream.
If having trouble slicing or a slightly unset custard, place pie in freezer for 20-30 minutes.
